Its origin is strictly southern, the word “provolone” derives from the term “provola” or “prova” (attempt). It was the sample used to check the spinning of the dairy product.

It’s an inimitable cheese made of Grigio Alpina Cow’s milk, collected into the lands of Masseria Grottillo and seasoned for 180 days; it is characterized by compact and straw yellow paste and a spicy taste.

It also has a very famous form with a classical ropnet or rush, which makes this delight recognizable everywhere.
