The “ricotta forte” is a typical recipe of Apulia and Basilicata, it has a soft and creamy consistency and a spicy taste. Its smell is particularly recognisable, very strong but likable.

The production of “ricotta forte” is a part of the preparation process of the green cheese produced by ovine and goat milk.

When the dairy product is ready, it will make a different way, it’s possible separate and reheat the whey; so we can gain a savory cream cheese which is potted and scrambled until the complete acidification.

You can use a little bit of this cream to season many sauces or you can spread it on toasted bread and fried “panzerotti”.
