The term “ricotta” defines a special cheese originated by the buttermilk processing. Also its name recalls the production technique: “ri-cotta” means cooked 2 times. The first one during the heating of the milk and the second one during the heating of the whey which derives from it.
Our fresh ricotta has a creamy and velvet consistency and a sweet flavor, you can immediately eat it or employ the cream to cook something delicious, for example bread and cake’s doughs or many other recipes.
