The “Primo Sale” is a cottage cheese, but also a determined level of Pecorino maturation . In effect, it can be consumed during all the stage of ripening (tuma, primo sale, secondo sale and pecorino stagionato), giving you every time a different kinds of taste.
The difference between the ripening stages is the process of salting and the time of maturing. The Primo Sale is ready after 30 days from the salting of the tuma and appears like a white (color) green cheese (type of cheese), with a sweet flavor. Its aroma reminds you of fresh milk.
It’s perfect to try during or at the end of the meal, this dairy product is a very delicacy with extravirgin olive oil, salt and pepper.
